Cranberry Eggnog Muffins: Recipe of the Week

Celebrate National Eggnog Day with this festive holiday drink!

Tomorrow is National Eggnog Day and we have a special treat for you to celebrate the occasion! Our cranberry eggnog muffins will get you in the holiday spirit if you’re not already. Eggnog has been a popular drink dating back to medieval times. Historians also found records that show George Washington created his own eggnog recipe. And most recently, David Letterman was known to have used eggnog for his holiday pranks on guests and his camera crew. So without further adieu let’s make these muffins!

From the kitchen of: C.W. Worth House Bed and Breakfast

Yield: 1 dozen muffins

Ingredients needed:

½ C. butter
¾ C. sugar
2 eggs
½-2/3 C. eggnog (or orange juice)
1 T. orange zest (optional)
2 C. flour
21/2 t. baking powder
½ t. salt
½ t. baking soda
1 t. vanilla
2 cups cranberries (frozen)

Let’s bake!!

Chop frozen cranberries in food processor until chopped to consistency for muffins, chunky, not mushy.

In a medium bowl, cream butter and sugar. Add eggs, one at a time. Add vanilla and blend.

In another bowl, sift dry ingredients. Add dry ingredients alternately with eggnog/OJ to egg mixture.

Stir cranberries into batter, just until blended.

Fill greased muffin tins ¾ full with batter. Pro tip: We use a large ice cream scoop. muffin tin of golden muffins with chunks of bright red cranberries

Bake at 375 degrees for 18-20 minutes until lightly brown on top and spring back when touched.
